Day Night Fried Kway Teow [日夜炒粿条] @ Bukit Merah Central

Whenever a question is raised on where is the best char kway teow in Singapore, i have always been very consistent in my answer; the one from block 132, Jalan Bukit Merah

Today, i found one that came to a close second! 

Despite the weird name Day Night, i doubt this popular stall (i have in fact heard about this stall a long time ago) is open 24 hours a day, regardless of day or night, rain or shine. 

One look and my initial thought was that this is going to be a great disappointment. 

And it came with a sour plum?! Who eats sour plum with char kway teow except for maybe the Penang style char kway teow which has a signature sourness that many people like and expect?

Surprisingly, this plate of fried kway teow far exceeded my expectation even without my usual request for additional black sauce to sweeten my saccharin inclined taste buds! 

The essential essence of the wok (wok-hei) was evident with every bite, the sour plum resulted in a zestiness that was weird yet comforting and most importantly, this dish would cater to those who prefer a optimal balance between sweetness and wok-hei.

There are two reasons why i could not crown this the best. One, i have always preferred a sweeter plate of char kway teow. Two, one item was noticeably missing from the dish; generous servings of deep fried pork lard!
